Mocha Almond Chia Oat Bites

Ingredients

  • Quaker Gluten Free Oats 270g
  • Chia seeds 2 tbsp
  • Almond butter 4 tbsp
  • Black coffee (espresso, brewed or instant) 120ml
  • Water
  • Honey 2 tsp
  • Vanilla extract 1 tsp
  • Almond extract 1/4 tsp
  • Dark chocolate chips 2 tbsp
  • Sliced almonds, toasted, finely chopped 1-1/2 tbsp

Preparation

  1. Place oats and chia seeds in large bowl. Whisk to combine.
  2. Add almond butter, coffee, 60ml water, honey and extracts. Stir until ingredients are combined.
  3. Stir in chocolate chips and add water 60ml at a time until mixture holds shape.
  4. Shape into 24 balls. Roll lightly in almonds.
  5. Refrigerate until firm.
  6. Store leftovers in refrigerator.
