Date Bar Dessert by Kathy Cakebread
My grandma started this recipe in the 1950's and it has been handed down in the family for years after. Perfect for an afternoon treat.
Ingredients
140g Quakers oats
190g all purpose flour
220g brown sugar
5g baking soda
3g salt
225 g cold butter or margarine
445g chopped dates
150g sugar
180ml water
60g chopped walnuts
whipped topping
Method
In a large bowl, combine oats, flour, brown sugar, baking soda and salt.
Cut in butter until mixture resembles coarse crumbs.
Press into a greased 13-in. x 9-in. x 2-in. baking pan.
In a saucepan, combine dates, sugar and water. Cook for 10 minutes or until thickened, stirring frequently. Stir in walnuts. Spread over crust.
Bake at 350 degrees F for 30 minutes. Cool on a wire rack.
Cut into squares; top with whipped topping.

"This will taste lovely, and be good for your fibre intake, but it takes a long time to prepare. Best to make triple the quantity and store the excess."
