Maple Figs with Orange Oats
Serves 4
Roasted figs served on Orange soaked Quaker Oats topped with thick Greek yoghurt and toasted almonds.
You will need
- 115g / 4oz Quaker Oats
- 55g (2oz) sultanas
- 225ml / 8fl oz orange juice
- 4 fresh figs
- 2 tablespoons maple syrup
- 30g (1oz) flaked almonds
Greek yoghurt to serve.
Preparation
- Place the oats and sultanas in a bowl and pour over the orange juice mix briefly. Cover and chill for 4-6 hours or overnight.
- Pre heat the oven to gas mark 5 (190C) Make a cross cut in the top of the figs and place in a shallow oven proof dish. Pour the maple syrup over the figs and scatter over the almonds and roast for approx 12-15 minutes until golden.
- To serve, spoon the oats into 4 large shot glasses, top with roasted warm figs. Finish with the greek yoghurt and an extra swirl of maple syrup.
