Diced Apricots, Stewed Cinnamon Apples & Pumpkin Seeds
Serves 2
You will need
- 1 cooking apple
- 1/2 teaspoon cinnamon
- 1 tablespoon golden caster sugar
- 2 tablespoons water
- Small handful of ready soaked apricots, diced
- 1 dessertspoonful of pumpkin seeds
Preparation
- Peel & core the apple.
- Cut it into chunks.
- Put them with the cinnamon, sugar & water in a heavy saucepan and simmer gently until softened.
- Allow to cool a little.
- Spoon over the cooked porridge.
- Top with the apricots & pumpkin seeds.
